Cherry Yogurt Popsicles

With Little C sick this past week with a fever and a sore throat, popsicles were one of the only things she would even consider eating. Luckily for me, that meant lots of chances to play around with recipes and flavors and ingredients. These yogurt cherry popsicles were a huge hit with the babe, so much so that she refused to let them freeze completely before chowing down; she ended up eating the first semi-frozen popsicle with a spoon. While this recipe has yogurt in it, you could totally sub dairy-free coconut yogurt or soy yogurt to make this a vegan recipe (which would also be great for those with dairy allergies)! I just didn’t have any coyo (coconut yogurt) on hand otherwise I would have made these vegan. The sweet, tart cherries and the creamy yogurt make for a KILLER combo.

Ingredients:

  • 1 cup plain yogurt
  • 1/4 cup vanilla almond milk
  • 1 tbs agave or maple syrup
  • handful of ripe cherries

How to do it:

  1. Wash cherries, remove pits, and cut in half
  2. Mix yogurt and almond milk in the blender
  3. Add agave or maple syrup to yogurt/almond milk mixture, add more sweetener if necessary
  4. Gently stir in cut cherries and then fill popsicle molds with mixture
  5. Freeze until frozen through, and then serve and enjoy! Or, if you’re like Little C, eat it with a spoon 😉
