Avocado Pomegranate Salsa

Talk about a superfood combo-pomegranates and avocados both boast tons of amazing health benefits (think tons of vitamins, antioxidants, aid in healthy cholesterol levels and lower bad cholesterol, packed with vitamins, and anti-cancer properties) and when my mother-in-law introduced me to this recipe it was literally one of the best days ever. For more health info on avocados look here, and for pomegranate benefits check out my step-by-step on juicing them here. This salsa is the perfect marriage of sweet and salty, crunchy and smooth. The creamy avocado paired with the tart pop of the pomegranate and tangy clementines is divine. Green onions lend a crunch while jalapenos add a bite.  And the colors. THE COLORS. It’s basically the most beautiful dip in the world. Add in the fact that it’s super healthy, and this recipe is a total winner.  I love to eat it with cucumber slices in place of chips, or put it on salad-might sound weird but it is sooo good on some greens.  This would be a great appetizer for your Valentine’s Day dinner-the colors alone make it a show stopper.

Ingredients:

  • 3 avocados
  • 3 tablespoons fresh lime juice
  • 2 cups clementine sections (about 6 clementines)
  • 1 cup pomegranate seeds (about 1 medium pomegranate)
  • 1/2 cup thinly sliced green onions
  • 1/2 cup minced fresh cilantro
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1 jalapeño pepper, seeded and minced

How to do it:

  1. Peel and cube avocado
  2. Juice the lime, mix with honey and salt
  3. Toss cubed avocado gently with lime mixture to coat
  4. Peel and separate the clementines
  5. Peel and seed pomegranate
  6. Chop cilantro finely
  7. Slice green onions thinly
  8. Seed and mince jalapeno
  9. Combine all ingredients in a bowl and gently mix
  10. Serve and enjoy!
