YUM. I’m desperately in need of a vacation and have been dreaming of sitting on some white sandy beach far far away….and this ridiculously delicious smoothie is so tropical tasting that it basically transports me there. It’s been unseasonably warm lately and smoothies are always on my mind so when Little C asked for a smoothie over the weekend I decided to throw together this combo and it turned out gloriously. The combo of the sweet pineapple, tangy mango, and juicy nectarine is like a flavor explosion in your mouth and I’m definitely planning to make popsicles with it next. I also love that there is an abundance of vitamin C and fiber from the fruit and omega-3 fatty acids from the chia seeds-healthy, delicious, dairy-free. You can’t lose 🙂 Double up the measurements for multiple smoothies, the recipe below makes one.
Ingredients:
- 1 ripe nectarine
- 1/2 cup fresh pineapple
- 1/2 cup mango (I used frozen)
- 1 cup unsweetened almond milk
- 1 tbs chia seeds
How to do it:
- Peel and chop nectarine
- Place cut pineapple in blender, followed by nectarine and mango
- Top fruit with chia seeds
- Pour almond milk over fruit and blend, add more almond milk if needed to achieve desired consistency. Feel free to use any kind of nut milk you want (or dairy if you do milk)
- Pour into cup and enjoy (or if you’re like me close your eyes and imagine yourself on some beach in the Bahamas)
