Rise and Shine Goji CaCao Protein Bowl

Doing breakfast the right way.Breakfast seems to be a pretty hot topic these days-there are studies that claim eating breakfast helps you lose weight, and others whose data argues the opposite. Regardless of the studies and information out there, what I can tell you is that for me, eating a good breakfast is key to setting up the rest of my day. I see a ton of posts and blogs with overnight oats and different carby options, and while i love love love oats, they are so much better as a post-workout meal (when your body is searching for carbs to turn into fuel) than as a breakfast food. So, what do you do? Make the Rise and Shine Goji Cacao Bowl!! Note: what is not pictured are the two hardboiled eggs, Kind bar, and avocado that I ate-I’ve got the appetite of a teenaged boy.

This bowl is amaaaaaazing.  It is packed with protein, fiber, amino acids, and vitamins, is great for blood sugar maintenance, and keeps you full without making you feel heavy.Ingredients:

  • 1 cup 0% Greek yogurt (I prefer Fage – no extra ingredients, just yogurt)
  • 1/4 cup almond butter
  • Handful of cacao nibs
  • Handful of goji berries
  • Two chopped medijool dates
  • 1 tbs chia seeds
  • Honey or Maple syrup (optional)

How to do it:
Put everything in a bowl, and mix together!

Sooooo good. The cacao nibs add a chocolatey crunch, the goji berries have a tangy sweetness, and the yogurt and almond butter add an amazing creaminess. As a breastfeeding mommy, I feel extra good knowing that all of the foods I am putting in my body are organic, minimally processed, whole foods.
