Gluten-Free Zucchini Choc Chip Muffins

Little C has been having a bit of a hard time adjusting to preschool, and has not been eating very much while she is there.  In an attempt to get as much nutrition into her as possible, I decided to make some gluten-free muffins for her to take each day in her lunchbox.  A lot of the time I concoct my own recipes but I turned to the pros for these zucchini bread muffins from Against All Grain to ensure that they were out of this world (which in turn would ensure the Little C would eat them).  If you have never checked out Against All Grain, it’s time that you do; all of the recipes are gluten-free and paleo friendly. I can not tell you how awesome it is to see these incredible sites dedicated to the gluten-free lifestyle, what we ingest has SUCH a huge impact on our bodies.  Made with almond flour, organic zucchini, honey, eggs and bananas, these muffins are to die for.  You can definitely make them without the chocolate chips if you are being strict about sugar, but these Enjoy Life chocolate chips are gluten-free and dairy-free!  Tummy and toddler approved 🙂  I simply followed her recipe, as listed on her site, but added an extra banana and a 1/2 cup of Enjoy Life chocolate chips.

Clearly these were a huge hit-both Big and Little C have been enjoying them, and I’ve already made three batches! Also, please note that Little C dressed herself for the pics, I take no responsibility for the awesomeness that is her outfit.  Totally not related to food in any way, but one of our cats, Daisy, decided to make her first appearance on the blog.  Readers, meet Daisy.  We have two kitties (Dexter is our second kitty) and the two of them will be making their television debut on My Cat From Hell.  Daisy is so great with Little C, we are really lucky that she is so patient with her, especially since Little C LOVES to hug her, pet her, and sometimes, tries to ride her like a horse.  Thanks for reading!
