Banana ‘Ice Cream’

Oh. My. Gosh. It is SO hot here; it’s ten o’clock at night and I’m sweating as I type this. Gross. Today it was 95 degrees and tomorrow it’s supposed to be even hotter, and with all this heat all that Little C wants is ice cream. Enter my saving grace, the super special banana ice cream. Literally just frozen blended bananas with a little coco powder thrown in, Little C has no clue that the chocolate ice cream she is eating is dairy free with no added sugar and is packed with potassium! I always save my bananas that are starting to get too ripe and pop them in a freezer bag for the days when Little C demands her ice cream (it’s a great way to make sure that the bananas don’t go to waste!). Aside from being uber healthy and super easy to make, I love that you can play around with various spices/fruits/and nut milks to create different flavors. My fav combo is vanilla almond milk, cinnamon, and coconut flakes. YUM! The perfect toddler-approved and mom-tested ice cream 🙂

Ingredients:

  • 3 frozen bananas
  • 3-5 tbs chocolate or vanilla almond milk
  • unsweetened coco powder (if you’re making chocolate ice cream)
  • 1 tsp vanilla extract
  • Optional toppings: cinnamon, cacao nibs, fresh fruit, unsweetened coconut flakes, goji berries, basically anything you can think of!

How to do it:

  1. Break up frozen bananas into pieces
  2. Blend until creamy
  3. Add coco powder if making chocolate ice cream
  4. Add almond milk and vanilla, blend until creamy and consistency is similar to that of soft serve
  5. Spoon into  bowl and sprinkle with toppings
  6. Enjoy!!
